Tasting Note
Concentrated black and red fruits (cassis, plum, blackberry), rose/peony florals, orange zest, exotic spice, cigar box and mineral notes; broad, layered and muscular with powdery, silky tannins and a long, resonant finish.

Roast duck, confit or Peking duck; roasted or grilled lamb; beef short ribs; mushroom risotto; coq au vin; Asian braised pork (char siu), miso-glazed aubergine, and soy-braised beef.

Production Method
Hand-harvested from centenarian vines; selective bunches nearest the trunk; high whole‑bunch fermentation (~60–75%); native yeasts, gravity work; aged ~18 months in oak (≈50% new).
