Tasting Note
Concentrated dark fruit (blackberry, plum, black cherry) with peony, orange peel, sweet spice, smoke and earth; firm, fine-grained tannins and a long, mineral-tinged finish.
Food Pairing
Roast duck, beef bourguignon, lamb or venison, mushroom risotto, aged Comté or Gruyère; Asian pairings: Peking duck, hoisin or char siu pork, miso-glazed aubergine/salmon, shiitake ramen, Korean BBQ (bulgogi).
Production Method
Hand-harvested; mainly un-éraflée (whole-bunch) vinification, fermented in vats and aged ~14–18 months in oak (c.30–50% new); bottled unfiltered. Organic conversion/certified around 2021.
