Tasting Note
Concentrated black cherry and plum with violet florals, licorice and forest-floor earth. Silky, sapid mid-palate, spicy oak and mineral lift; firm, polished tannins and a long, saline finish.

Food Pairing
Western: roasted beef, lamb, game (venison), mushroom risotto, aged cheeses. Asian: Peking duck, char siu, miso-glazed dishes, Korean braised short ribs (galbi jjim).

Production Method
Hand-harvested Pinot Noir, high proportion whole-cluster fermentation with indigenous yeasts; long élevage (~18 months) in French oak (high % new for V.V. cuvées).

Château de la Tour (Labet family) owns the largest single holding within Clos Vougeot (~6 ha); estate vinifies and matures wines inside the Clos. Converted to organic/biodynamic practices in recent years.
