Tasting Note
Concentrated dark cherry, blackberry and plum with violets, tobacco, forest floor and mineral notes. Ripe yet structured, firm dusty tannins, toasted oak spice and a long savory finish.
Food Pairing
Western: roasted lamb, beef, venison, mushroom risotto, hard cheeses (Comté, aged Gouda). Asian: Peking duck, char siu, soy-braised short ribs, Korean BBQ, miso-glazed eggplant, mushroom hot pot.
Production Method
Hand-harvested, whole-bunch fermentation with 2–3 week maceration; aged 16–18 months in French oak (Vieilles Vignes often finished in a high proportion of new oak).
