Tasting Note
Deep crimson with black cherry, blueberry, violets, cedar and baking-spice notes. Full-bodied and concentrated, with velvety ripe tannins, mineral lift and a long, layered finish.
Food Pairing
Western: roast lamb, beef, venison, braised short ribs, aged cow's cheeses. Asian: Peking duck, char siu (BBQ pork), Korean BBQ, rich Sichuan or Cantonese braised beef.
Production Method
Hand-harvested, destemmed, fermented in temperature-controlled vats with malolactic conversion; aged in French oak barrels (36% new) prior to bottling.
