Mature vintage Champagne of baked apple, dried apricot, lemon zest, honeyed brioche, toasted almond and subtle oxidative/ nutty notes; creamy mousse with a fresh, mineral finish.

Oysters, smoked salmon, lobster, roast chicken, creamy pâté, soft cheeses (Brie), sushi and sashimi, tempura, dim sum, Peking duck.


Production Method

Méthode traditionnelle: bottle fermentation with very long lees ageing (decades); disgorged after extended maturation; Brut dosage (~6–7 g/L).
