Tasting Note

Amber-hued and mature: dried stone fruit, candied citrus, honeyed brioche, tobacco, smoke and garrigue; palate shows baked orchard fruit, toasted nuts, saline acidity and fine persistent mousse with a long, savory finish.

Oysters, lobster, scallops, rich fish dishes, roast pork, roast poultry with cream sauces, foie gras; Asian: sushi/sashimi, tempura, dim sum, Peking duck, Cantonese-style seafood.


Production Method

Traditional method (méthode champenoise). Vintage cuvée from selected Grand/Premier Cru fruit; very long lees ageing (c.20 years) and disgorged as Brut (≈6–8 g/L dosage).
