Tasting Note
Elegant, medium-full Pinot Noir: red and black cherry, blackberry, peony and orange zest with sous-bois, spice, cedar and subtle graphite. Silky, fine tannins, mineral backbone and a long, refined finish.
Food Pairing
Western: roast lamb, grilled ribeye, duck breast, game (venison), aged cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), miso-glazed eggplant, mushroom hot pot.
Production Method
Biodynamic viticulture; hand-harvested. Fermented in oak truncated-cone vats without pumps; minimal/no sulphites except in extreme years. Aged 15–18 months in 228L French oak (≈85% used, remainder new).
Vineyard Info
Family domaine since 1834 (de Nicolay family). 13 ha across Savigny, Pernand and Aloxe; converted to biodynamics in the 2000s. Managed today by Claude and François de Nicolay.
