Tasting Note

Dark garnet Pinot Noir with black cherry, blackberry, rose and violet perfume, saline minerality, spice and cedar. Silky ripe tannins, fresh acidity and an energetic, long finish.


Food Pairing

Western: roast duck, beef bourguignon, mushroom risotto, roasted lamb. Asian: Peking duck, miso-glazed pork or black cod, soy-marinated grilled beef (Korean BBQ), char siu.


Production Method

Biodynamic vineyards; hand-harvested; native-yeast fermentation in wooden vats with partial whole-cluster; aged 15–18 months in French oak (≈15% new); minimal SO2; bottled unfined/unfiltered.

Historic family domaine owned by the de Nicolay family since 1834; run by siblings Claude and François de Nicolay; 13 ha across Corton, Pernand and Savigny; biodynamic since mid-2000s.
