Tasting Note

Powerful, mineral-driven Grand Cru Chardonnay: yellow orchard fruit, quince, citrus oils, brioche and flint. Broad, opulent palate with saline minerality, bright, mouthwatering acidity and an extremely long, precise finish.


Food Pairing

Western: lobster with beurre monté, foie gras, roast chicken/veal in cream, aged Comté or Beaufort. Asian: miso-glazed black cod, seared scallops/sushi (fatty tuna), tempura, mildly spiced Thai coconut curries.


Production Method

Hand-harvested Chardonnay; fermented with indigenous yeasts and aged 18–24 months in mostly used French oak barrels. Extended lees contact, minimal sulphur; biodynamic vineyard practices.


Vineyard Info

Historic family domaine (since 1834) in Savigny-lès-Beaune run by Claude and François de Nicolay. Estate converted to organic then biodynamic viticulture; Corton-Charlemagne parcel is tiny (≈0.1103 ha).
