Tasting Note
Perfumed red-berry and peony aromas with plum, kirsch, orange rind and earthy minerality. Medium–full-bodied, velvety texture, fine-grained tannins, spicy clove/pepper notes and a long chalky finish.

Food Pairing
Western: roast lamb, duck confit, beef bourguignon, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, char siu or hoisin-glazed pork, Korean bulgogi, miso-grilled eggplant, shiitake stir-fry with soy and mirin.

Production Method
Hand-harvested, biodynamically farmed; partial whole-cluster fermentation, indigenous yeasts, no pumps; élevage ~15–18 months in oak (mostly used barrels, limited new oak).
