Tasting Note
Concentrated Pessac-Léognan red: blackcurrant, blackberry and plum with violet, tobacco, truffle and subtle cedar. Medium–full body, fine-grained tannins, lively acidity and a long, anise-tinged finish. Elegant and built for medium–long aging.
Food Pairing
Western: roast rack of lamb, grilled ribeye, beef bourguignon, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ beef, soy-ginger braised short ribs, rich Japanese wagyu.
Production Method
Traditional Bordeaux vinification: hand-harvested, destemmed, fermented in temperature-controlled vats; élevage in French oak (≈30% new) for c.18 months; bottled at the château.
