Tasting Note
Perfumed apricot, red currant and black plum with clove, savory/roast-meat and subtle floral lift; silky, fine-grained tannins, bright acidity, plush mid‑palate and a long, spice-laced finish.
Food Pairing
Roast lamb, braised short ribs, grilled ribeye, aged hard cheeses; Asian: Peking duck, char siu pork, Korean BBQ short ribs, spicy Sichuan beef, teriyaki beef skewers.
Production Method
Co-fermented with 6% Viognier, ~20% whole-bunch; three-day cool preferment maceration, largely wild ferments to ~33°C; matured 12 months in French oak (30% new).
