Tasting Note
Intense ruby with aromas of cherry, plum, wild berry, dried roses, Mediterranean herbs, leather and tobacco. Firm tannins, bright acidity, licorice and balsamic notes on palate; long savory, persistent finish.
Food Pairing
Western: grilled ribeye or bistecca alla Fiorentina, braised beef short ribs, roasted lamb, mushroom risotto, aged Pecorino or Parmigiano. Asian: Peking duck, Korean BBQ (galbi/bulgogi), beef rendang, char siu, miso-glazed mushrooms or umami-rich Chinese braises.
Production Method
Hand-harvested Sangiovese; fermented in temperature-controlled stainless steel (≈28°C) with 20–25 day maceration; malolactic in concrete/wood; aged 3–4 years in Allier (French) and Slavonian large oak casks, then further bottle aging.
Vineyard Info
