Tasting Note
Brooding dark cherry and black raspberry with forest-floor, sauvage and subtle mocha notes. Concentrated, mineral-driven midpalate with velvety texture, firm tannins and a long, slightly austere finish.

Food Pairing
Western: roast lamb, beef bourguignon, duck confit, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ, miso-glazed salmon, umami mushroom/soy stir-fries.

Production Method
Hand-harvested Pinot Noir; whole-cluster (stems included) fermentation with native yeasts; gentle pressing and 18–24 months ageing in French oak (moderate new); bottled unfined/unfiltered.
