Aromas of quince, apricot, honeyed citrus and exotic pineapple with saline/mineral notes. Lively high acidity balances rounded sweetness, giving bright citrus drive, orchard fruit and a long, gently bitter finish.

Foie gras, blue cheese, roast pork or poultry (western); spicy Thai curries, Peking duck, char siu, rich sushi (asian).
Production Method
Late-harvest Petit and Gros Manseng, hand-harvested with passerillage/selection; indigenous-yeast fermentation and extended ageing in large oak foudres/barrels before bottling as a demi-sec.
Vineyard Info
