Tasting Note
Off-dry, aromatic white: quince, candied pineapple, litchi, citrus zest and almond with flinty minerality and faint truffle notes. Vibrant acidity balanced by gentle sweetness and a long saline finish.

Western: foie gras, scallops, lobster, roasted chicken, pork belly, aged or blue cheeses. Asian: Thai green curry, spicy Szechuan prawns, Chinese roast duck, sushi and sashimi with citrus.
Production Method
Hand-harvested with successive sorting; slow pneumatic pressing; fermentation in stainless steel and new large-format oak 'cigar' barrels; ~12 months barrel ageing; bottled after élevage to retain off-dry balance.
