Tasting Note

Lusciously sweet yet sharply poised: honeyed apricot, candied pineapple, orange zest and floral honey, with spice and bright, cleansing acidity leading to a long mineral finish.

Foie gras, blue cheeses (Roquefort, Stilton), tarte tatin/pear tart, roasted scallops or lobster (beurre blanc); Asian: mango sticky rice, spicy Thai or Szechuan dishes, Peking duck, sweet-spicy Chinese sauces.


Production Method

Hand-harvested late-harvest Petit Manseng (often with noble rot), fermented with indigenous yeasts and aged briefly in wood/foudres to preserve freshness and concentration.

Les Jardins de Babylone is a tiny (≈3 ha) steep-terrace estate in Aubertin owned by the Dagueneau family; founded by Didier Dagueneau and continued by his children, noted for low yields and meticulous viticulture.
