Tasting Note
Lively demi-sec white with concentrated quince, candied citrus, pineapple and truffle notes; vibrant saline-mineral backbone, juicy acidity and spectacularly long, spicy-citrus finish.
Food Pairing
Western: foie gras, blue cheese, grilled lobster, roasted pork; Asian: spiced Thai curry, Sichuan prawns, Peking duck, richer sushi (torched or fatty tuna).
Production Method
Late, hand-harvested Petit and Gros Manseng with selective sorting; partial passerillage/late harvest, indigenous yeast fermentation; matured in large oak foudres/barrels before extended bottle aging.
