Tasting Note
Crisp, mineral-driven white with lemon, lime zest, green apple, white flowers and faint tropical notes; concentrated mid-palate with bright acidity and a firm, stony finish.

Western: seared scallops, grilled sea bass, roast chicken, mild goat cheese, pear tart. Asian: sushi/sashimi, Vietnamese spring rolls, Thai citrus/ginger fish, mildly spiced Sichuan prawns.
Production Method
Hand-harvested, low-yield grapes; fermented in stainless steel and 'cigar' demi-muids, aged 12–16 months in a mix of oak and steel, then blended before bottling.

Created by Didier Dagueneau from terraced vineyards at Aubertin; now stewarded by his family. Small holdings, precise viticulture and rigorous sorting produce concentrated, terroir-driven Jurançon whites.
