Tasting Note
Lush sweet profile of pineapple, mango, apricot and honey with candied citrus and floral lift; piercing citrus acidity and saline minerality keep it fresh. Rich, precise and long with a bright, refreshing finish.
Food Pairing
Western: foie gras, blue and aged cheeses (Comté), roasted lobster, seared scallops, fruit desserts. Asian: Thai coconut curry prawns, spicy Szechuan shrimp, Peking duck, Cantonese dim sum with shrimp, Indonesian satay with peanut sauce.
Production Method
Hand-harvested in successive passes at very high ripeness; late-harvest/botrytis influence on Petit Manseng; fermented and aged in new and large oak (320L 'cigars' and 600L tonneaux/foudres); biodynamic/organic practices.

Tiny 3.2 ha terraced amphitheatre at Aubertin bought by Didier Dagueneau; now run by Louis‑Benjamin Dagueneau. Very low yields, tiny production, historically reserved for top restaurants.
