Tasting Note
Pronounced flinty/gunflint minerality with lemon, lime, green apple, white flowers and fresh herbs. Medium-full palate, bright, racy acidity, subtle oak spice and saline, crystalline finish with long mineral persistence.

Oysters, grilled or roasted sea bass, scallops, roasted chicken with citrus, goat cheeses (fresh chèvre); sushi/sashimi, tempura, steamed fish with ginger and spring onion, Thai lemongrass fish, Chinese-style steamed whole fish.
Production Method
Hand-harvested fruit from silex (flint) soils; gentle pressing, fermentation and élevage in large oak casks (320L 'cigares' and 600L 'tonneaux') with lees ageing to add texture; low-yield, meticulous viticulture.
Vineyard Info
Domaine Didier Dagueneau, founded 1982 in Saint-Andelain; famous for obsessive vineyard work and flinty Pouilly-Fumé expressions. Didier died 2008; his son Louis‑Benjamin continues the estate and the Silex bottling from silex-rich parcels.
