Tasting Note

Concentrated white peach, pear and citrus with toasted hazelnut, subtle buttery notes and striking mineral drive. Vibrant acidity and broad, mouthcoating texture finishing long and saline.

Western: lobster thermidor, roasted chicken with cream sauce, foie gras, truffled risotto. Asian: miso‑glazed black cod, tempura prawns, Cantonese steamed fish, rich Japanese sushi with fatty tuna.


Production Method

Biodynamic viticulture, hand‑harvested; whole‑cluster pressing, barrel fermentation and élevage in large oak and barriques with limited new oak and lees contact.
