Tasting Note
Concentrated red and black cherry, violet and blackberry with forest-floor, leather and baking-spice accents. Silky texture, bright acidity, firm ripe tannins and a long mineral-driven finish.

Food Pairing
Western: roast lamb, beef côte de boeuf, game, mushroom risotto, truffle pasta. Asian: Peking duck, soy-glazed miso cod, char siu, bulgogi, shiitake and tofu hotpot.

Production Method
Hand-harvested, biodynamic/organic viticulture; cold pre-fermentation soak, partial whole-cluster fermentation, native yeasts; 16–18 months in French oak (c.33–40% new).
