Tasting Note
Crisp, mineral-driven Chardonnay with citrus (lemon, lime), green apple, white flowers and oyster-shell salinity; subtle spice and toast, racy acidity, concentrated mid-palate and a long, stony finish.

Western: grilled lobster, seared scallops, roasted chicken with cream, truffle dishes, foie gras. Asian: miso-glazed black cod, steamed fish with ginger & scallions, delicate sushi (torot), light tempura, Cantonese steamed shellfish.
Production Method
Organic/biodynamic viticulture; whole-cluster pneumatic pressing, débourbage, partial fermentation in stainless steel then in oak; aged ~14–17 months with low % new oak, monthly bâtonnage and light filtration.
