Tasting Note
Perfumed black cherry and red-berry core with violet, jasmine, forest-floor and exotic spice. Medium-bodied, fresh with finely sculpted tannins, pronounced minerality and a very long, elegant finish.

Western: roast duck, entrecôte/prime rib, beef tournedos, wild mushroom risotto. Asian: Peking duck, miso-glazed black cod, soy‑braised short rib, shiitake and oyster sauce dishes (umami-rich).
Production Method
100% whole-bunch (vendange entière) fermentation; cold pre-fermentation maceration (~5 days), ~21-day cuvaison; gravity filling, no inoculation; 16 months élevage in oak (≈28% new).
