Tasting Note
Pale lemon-gold; orchard fruits (apple, pear), citrus, hazelnut and saline minerality. Creamy, taffeta-like texture with bright acidity and a long, mineral finish.

Food Pairing
Western: roast chicken with beurre blanc, seared scallops, lobster, creamy pasta, aged Comté or Gruyère. Asian: miso-glazed cod, seared scallops with soy-citrus, richer sushi (e.g., toro), delicate dim sum, light Thai coconut fish curry.

Production Method
Whole-bunch pneumatic pressing, 24h settling, fermentation on indigenous yeasts, 16 months élevage in barrels (~20% new), monthly bâtonnage, minimal intervention and light filtration.
