Tasting Note
Rich, mineral white Burgundy: white peach, ripe apple, chamomile, citrus and wet-stone notes with hints of star anise and hazelnut. Powerful, layered, fresh acidity and a long saline, slightly spicy finish.

Food Pairing
Western: oysters, scallops, lobster, roast chicken with cream sauce, mushroom risotto. Asian: sashimi/sushi, miso-glazed cod, tempura, Cantonese steamed fish, light Thai curry.

Production Method
Hand-harvested; whole-cluster pneumatic pressing, light settling; fermentation begun in stainless steel and finished in French oak; 15–16 months élevage with ~20–28% new oak. Certified organic and biodynamic viticulture.
