Tasting Note
Dense garnet Nebbiolo with violet, cherry and plum, spice, licorice, cocoa, leather and tobacco; truffle and forest-floor hints, full-bodied, velvety texture and a long mineral finish.
Food Pairing
Western: tajarin or ravioli, braised beef, osso buco, roast red meats, game, aged cheeses and truffle dishes. Asian: Peking duck, Cantonese roasted pork (char siu), Korean barbecue (galbi), Szechuan beef or rich beef rendangs.
Production Method
Fermented ~20 days with ~30 days submerged-cap maceration; aged about five years in large oak casks (riserva) and further bottle aging before release.
