Tasting Note

Concentrated black cherry and blackberry with truffle, forest-floor and clove; white pepper and cocoa notes. Silky, ripe tannins, mineral backbone and a long, elegant finish.

Food Pairing

Roasted venison, duck (Rossini/Peking), lamb chops, foie gras, mushroom risotto, truffle pasta; Asian pairings: Peking duck, char siu, bulgogi, shiitake or mixed mushroom hot pot.

Production Method

Hand-harvested; ~80% whole-cluster fermentation with wild yeasts; 14–17 day maceration; aged ~14 months in French oak (≈40% new, remainder 1–3 year barrels); bottled unfined/unfiltered.

Vineyard Info

Family domaine founded in the 1960s. David Duband farms ~17 ha organically/biodynamically; Echézeaux parcel planted with very old vines (c.70 years), eastern exposure on limestone/marl soils.
