Tasting Note

Pure, floral Pinot Noir: red currant, pomegranate, rose petal and woodland spice with flinty minerality, fine-grained tannins, bright acidity and a saline, lingering finish.


Food Pairing

Western: roast duck, game birds, lamb, beef, mushroom dishes, beef bourguignon. Asian: teriyaki beef, miso‑glazed pork, Korean BBQ, yakitori, mushroom hot pot.


Production Method

Hand‑harvested; ~90% whole‑cluster fermentation for grands crus, 15–17 day maceration with pigeage/remontage, aged ~14 months in oak (≈40% new; remainder 1–3 year barrels), bottled without fining/filtration.
