Bright red fruits (cranberry, redcurrant) with floral and slate minerality, layered with black cherry, herb and subtle cocoa. Concentrated and precise, showing fine grainy tannins, lively acidity and a very long, energetic finish.
Food Pairing
Roast lamb, grilled beef, duck confit, mushroom risotto, charcuterie and aged cheeses; Asian pairings: Peking duck, char siu, Korean BBQ, teriyaki chicken, spicy Sichuan dishes and ramen.
Production Method
Hand-harvested Mencía-dominant fruit; fermented with indigenous yeasts in oak vats; matured ~8 months in a mix of oak barrels and large foudres before bottling.
Vineyard Info
Produced by Descendientes de J. Palacios (led by Ricardo Pérez Palacios), a high-profile Bierzo project focused on single-parcel expressions from steep slate slopes.
