Tasting Note
Fresh citrus, green apple and white orchard fruit with floral notes, subtle spice and saline minerality; gently creamy texture, brisk acidity and an unusually concentrated, long, bone-dry finish with a faint warm spice.

Food Pairing
Western: oysters, scallops, ceviche, grilled white fish, roast chicken, goat cheese, salads. Asian: sushi/sashimi, tempura, steamed fish with ginger & scallions, Vietnamese spring rolls, light Thai seafood dishes.

Production Method
Biodynamic viticulture, hand-harvested with baie-par-baie selection; fermented and aged on lees in French oak barrels (selected new barrels), gentle élevage and limited SO2.
