Tasting Note
Ripe citrus, stone fruit and white flowers with honeyed almond, toasted hazelnut and a pronounced wet-stone/mineral core; rich, silky texture, saline lift and a very long, layered finish.

Food Pairing
Western: lobster with brown butter, seared scallops, roasted chicken with cream sauce, mushroom risotto, aged Comté or Gruyère. Asian: miso‑glazed black cod, sushi/sashimi (toro), crab or scallop dim sum, delicate Thai or Vietnamese coconut seafood dishes.

Production Method
Hand-harvested Grand Cru Chardonnay from a tiny parcel; biodynamic/low-intervention viticulture, whole-cluster pressing, fermentation and élevage in French oak (partial new oak), typically 12–18 months.

Domaine d'Auvenay (owned by Lalou Bize-Leroy) acquired the 0.16 ha Chevalier-Montrachet parcel in 1992; vines date from around the 1940s and annual production is extremely small (typically under ~500 bottles).
