Tasting Note
Elegant, mineral-driven Chardonnay with citrus, white flowers, toasted hazelnut, ripe stone fruit, honeyed notes, saline minerality and subtle spicy oak; creamy mid-palate and a long, precise finish.

Western: roast chicken with herbs, beurre blanc lobster, grilled sea bass, mushroom risotto. Asian: miso-glazed black cod, tempura prawns, sushi (fatty fish), steamed fish with ginger & scallions.
Production Method
Biodynamic viticulture, hand-harvested, very low yields. Whole-bunch/whole-berry handling, barrel fermentation and élevage in mostly new oak for c.14–18 months; minimal fining and often bottled unfiltered.
