Tasting Note
Powerful, voluminous Chardonnay: ripe orchard and stone fruit, apricot, toasted nuts, honey and white flowers, with smoky/mineral and saline notes and a long flinty finish.

Western: lobster with beurre blanc, foie gras, scallops, turbot with beurre blanc, risotto with morels, chicken with truffle jus. Asian: miso‑glazed black cod, steamed sea bass with ginger-soy, rich sushi (toro), Cantonese steamed lobster, creamy Thai curry.
Production Method
Manual harvest; gentle pressing and 24h settling; alcoholic and malolactic fermentations in oak; 18 months élevage (c.12 months in barrel, 6 months in tank); ~25% new oak.
