Tasting Note
Powerful, opulent Chardonnay with lemon, white peach, hazelnut, butter and vanilla over stony minerality. Rich, broad palate, firm acidity and abundant extract; very long finish. Benefits from bottle age.

Western: foie gras, lobster, monkfish or cod in creamy sauce, roast Bresse chicken, veal with mushroom sauce. Asian: miso-glazed black cod, Cantonese steamed fish, tempura prawns, richer sushi (e.g. salmon toro).
Production Method
Biodynamic vineyard practices, 100% manual harvest, pneumatic pressing; fermentation and élevage in oak (c.17 months, ~25% new), light fining and filtration.
