Tasting Note
White flowers, preserved citrus, toasted almond and stone minerality; rich, oily texture with layered orchard fruit, toast and saline finish, elegant acidity and long persistence.
Food Pairing
Western: grilled lobster, roasted shellfish, roasted chicken, foie gras, beurre blanc dishes. Asian: miso-glazed cod, tempura, sushi/sashimi (fatty fish), Cantonese steamed fish or poached chicken with light sauces.
Production Method
Biodynamic farming; long gentle pneumatic pressing, 24h settling, fermentation and élevage in oak (≈25% new), ~12 months in barrel then tank ageing; light fining/filtration.
