Tasting Note
Green apple, white peach and apricot with hazelnut, honey and lemon zest; stony minerality, saline detail, satiny medium–full body, lively acidity and a long, precise finish.

Food Pairing
Seared scallops, lobster, creamy chicken or mushroom risotto; Asian: miso-glazed cod, tempura prawns, sushi (fatty cuts), Hainanese chicken.

Production Method
Biodynamic viticulture; long gentle pneumatic pressing, 24h settling; alcoholic (and malolactic) fermentation in oak (≈22% new); 12 months in barrel then ~6 months in tank; light fining and filtering.
