Tasting Note
Delicate, aromatic nose of eucalyptus, mint, mirabelle plum, apricot and orange blossom; palate shows lemon and stone fruit, toasted brioche, ginger and saline minerality, with creamy texture and a long, saline finish.

Western: oysters, scallops, seared tuna, smoked salmon, roast pork, aged cheeses (Brie, Comté). Asian: sushi and sashimi, tempura, dim sum (shrimp dumplings), miso-glazed fish, Cantonese roasted pork.

Vintage blend (51% Pinot Noir, 49% Chardonnay) produced by traditional method (méthode champenoise); aged on lees ~7–8 years, disgorged 2021; dosage approx. 5 g/L.
