Tasting Note

Matured cool-climate Cabernet with dried blackcurrant, leather, cedar and tobacco notes; hints of earthy forest floor and dried herbs. Firm but softened tannins, medium-full body and a lingering savory finish.


Food Pairing

Western: roast lamb, grilled ribeye, braised beef stew, aged cheddar. Asian: Peking duck, char siu, Korean BBQ (bulgogi), Sichuan-style beef, miso-marinated dishes.


Production Method

Hand-harvested fruit from Stoney Vineyard; small-batch fermentation and traditional Bordeaux-style winemaking with maturation in French oak barrels (blended and barrel-aged).
