Tasting Note
Pale straw. Bright grapefruit, lemon and honeysuckle with lavender and spicy vanilla; creamy, oak-driven texture balanced by lively natural acidity and a long, complex finish.

Food Pairing
Western: grilled lobster, seared scallops, roast chicken with herbs, creamy pasta, goat cheese. Asian: miso‑glazed black cod, tempura prawns, sushi/sashimi, Thai fish cakes, Cantonese roast pork.

Production Method
Hand-harvested fruit fermented in 100% new French oak barriques, 12 months on lees, then bottled after ~2 years bottle aging; typically unfined and unfiltered.
