Tasting Note
Dark cherry, raspberry and blackcurrant with bay leaf, sage, white pepper and subtle cedar. Silky, precise palate with very fine tannins, bright acidity and a long mineral finish with citrus lift.

Western: roast lamb, duck breast with cherry sauce, beef bourguignon, mushroom risotto. Asian: Peking duck, miso-glazed black cod, teriyaki/soy-glazed salmon, char siu pork, shiitake & soy dishes.
