Tasting Note
Ripe pear, yellow apple and white peach with citrus zest, honeyed stone-fruit and toasted almond. Creamy mid-palate, saline minerality and a long, nutty finish with subtle spice and floral notes.
Food Pairing
Western: roast chicken, lobster thermidor, mushroom risotto, aged Gruyère. Asian: miso-glazed cod, seared scallops with soy-butter, crab tempura, mild Thai coconut curry.
Production Method
Hand-harvested; long, slow fermentation with indigenous yeasts; aged ~12 months in large (350L) oak barrels/tonneaux with light new oak; minimal bâtonnage; sulfur added after malo.
