Bright red and black cherry, wild raspberry, violets, forest floor and chalky minerality, with baking spice and subtle oak; medium‑full, vibrant acidity, fine‑grained tannins and a long, saline finish.

Roast duck, coq au vin, mushroom risotto, grilled pork or beef, aged Comté; Asian: Peking duck, char siu, miso‑glazed aubergine, braised beef short rib (Korean/Japanese styles).

Production Method

100% destemmed (whole berries), native yeast fermentation, maceration, aged ~18 months in French oak (c.15% new); minimal racking, bottled unfined and unfiltered.
