Tasting Note
Perfumed dark cherry, raspberry and rose-petal aromas with stony minerality, spice and savory earth. Silky, layered mid-palate, vibrant acidity and fine-grained tannins, finishing long, saline and persistent.

Western: roast duck, seared venison, beef carpaccio, mushroom risotto. Asian: Peking or Cantonese roast duck, char siu or soy-glazed pork, miso-glazed salmon, mushroom stir-fry with oyster sauce.

Production Method
Hand-harvested old vines; native-yeast fermentations with gentle punch‑downs and some whole clusters; aged 18–20 months in French oak with low new-oak usage.
