Tasting Note
Powerful floral and stone-fruit aromas—honeysuckle, violet, apricot and white peach—lifted by saffron and dusty mineral notes. Broad, concentrated palate of pear nectar, orange pith and honeyed texture, bright acidity and a long, incisive mineral finish.

Western: foie gras, seared scallops, lobster or prawn ravioli, roast lemon chicken, apricot tart, aged goat cheeses. Asian: Thai coconut-lime seafood soup, lemongrass ceviche, Vietnamese grilled prawns, sushi (rich/fatty cuts), Chinese roasted duck with hoisin/plum.
Production Method
Hand-harvested Viognier; native-yeast fermentation in temperature-controlled vats; short maceration possible; élevage ~12 months in 300L oak barrels (small proportion new). Minimal intervention.
