Tasting Note
Perfumed black and red berries, candied violet, black pepper and olive tapenade with a stony mineral core. Silky, fine tannins, vibrant acidity and a long, spicy blackberry-to-floral finish.

Western: grilled ribeye, roast lamb, venison, mushroom risotto. Asian: Peking duck, char siu, Korean BBQ, Sichuan‑style braised beef, teriyaki‑glazed duck.
Production Method
Hand‑harvested; mostly destemmed; fermentation with native yeasts in stainless steel; aged ~20–23 months in 2–3 year oak barrels (c.40% new). Minimal intervention in cellar.
