Tasting Note
Bright red berries (cherry, strawberry) with floral violet notes, pronounced saline/mineral chalk, baking spice and subtle earth. Silky texture, vibrant acidity, fine sandy tannins and a long, savory finish.

Beef bourguignon, oxtail stew, mushroom ravioli, grilled steak; Asian: hoisin duck, braised pork belly, miso-glazed salmon, mushroom soba, Korean bulgogi.

Production Method
Hand-harvested fruit; ~40% whole-cluster fermentation (2017), extended maceration; aged 18 months in French oak (minor new oak component).
