Tasting Note
Pear, peach and green apple with orange oil, toasted nuts and white flowers. Medium–full, satiny texture with focused minerality and a long saline, slightly spicy finish.

Western: roast chicken, lobster with beurre blanc, mushroom risotto, creamy pasta, aged Comté. Asian: miso‑glazed cod, tempura prawns, sushi (fatty fish), Chinese steamed crab with ginger and scallion, richer Thai coconut seafood curry.
Production Method
Whole- or partial bunch pressing, fermentation in large barrels (15–18% new oak), bâtonnage on the lees, malolactic fermentation and aged sur lie ~11 months, then additional aging in stainless before bottling.
